Delicious Vegetable Curry

Vegetable Curry Recipes

Serves: 4 to 6
Ingredients:

  1. 1 tablespoon olive oil
  2. 1 onion, chopped
  3. 2 cloves crushed garlic
  4. 2 1/2 tablespoons curry powder
  5. 2 tablespoons tomato paste
  6. 1 (14.5 ounce) can diced tomatoes
  7. 1 cube vegetable buillon
  8. 1 (10 ouce) package frozen vegetable mix
  9. 1 1/2 cups water
  10. salt and pepper to taste
  11. 2 tablespoons chopped fresh cilantro


Cooking Instructions:

  1. In a large saucepan over medium-high, heat oil and saute onion and garlic until golden. Stir in curry powder and tomato paste, cook 2 to 3 minutes.
  2. Stir in tomatoes, vegetable buillon cube, mixed vegetables, water, and salt and pepper to taste.
  3. Cook approximately 30 minutes unitl vegetables are well done, and no longer crunchy. Sprinkle with fresh cilantro before serving.
