Festive Salad with Dried Cranberries
1 head romaine lettuce, torn or chopped
1 small red onion, chopped
1 red bell pepper, chopped
1 cucumber, chopped
10 kalamata olives, pitted and sliced
1 dozen cherry tomatoes, halved
1/2 cup pecans, chopped, toasted lightly in dry iron frying pan
1/2 cup cranberries, (juice sweetened and dried)
